Cool Down After a Hike

Today is National Peach Ice Cream Day! There is not much else that is better after a quick summer time hike than a cold ice cream treat. While eating by the scoop, is my preferred method of peach ice cream delivery, it is not very travel friendly. So I dug around through Shannon Jackson Arnold’s Everybody Loves Ice Cream to find a portable variation and found it on page 171.

This is a variation on the milk shake and is dairy-free! (So, added bonus of not sitting so heavy after a hike in the heat.)

Peach Sorbet Cooler
A dairy-free shake.
3 scoops of peach sorbet
1.5 cups of seltzer water
Blend to smooth perfection.

That sounds nice, doesn’t it? I might even drop a handful of ice cubes in it, just to make sure it stays cool throughout the hike.
